Restaurant queso is mostly processed cheese. This cottage cheese queso blends cottage cheese with real sharp cheddar for a silky, scoopable dip with 12 grams of protein per quarter cup.

Blend, then melt slowly

Blending turns cottage cheese into a smooth base that melts into the cheddar instead of separating. Heat it gently in short bursts, stirring each time.

Serving ideas

  • With bell pepper strips, cucumber and jicama for a low-carb snack.
  • Drizzled over a chicken burrito bowl.

Ingredients

Instructions

  3. Stir in the tomatoes with green chiles, cumin and chili powder.
  4. Serve warm with vegetables or tortilla chips.

Notes

  • Stovetop: warm in a small saucepan over low heat, stirring constantly. High heat makes it grainy.

    Questions people ask

Why is my cottage cheese queso grainy?

The cottage cheese was not blended smooth or it was heated too fast. Blend first and melt slowly.

    Can I use regular cheddar?

Yes. Full-fat cheddar melts a little smoother and adds about 25 calories per serving.
