Cottage cheese toast takes five minutes and gives you 21 grams of protein, about as much as three eggs. It is the easiest way we know to turn a slice of toast into a breakfast that lasts until lunch.

Whipped or not

Straight from the tub works, but blending the cottage cheese for 30 seconds makes it silky and spreadable, like whipped ricotta. Make a full container at once and it keeps all week.

Three ways to top it

  • Tomato and everything seasoning (the recipe above).
  • Berries and honey: sliced strawberries, a teaspoon of honey and a pinch of flaky salt.
  • Smoked salmon: 1 oz smoked salmon, cucumber and dill adds 5 more grams of protein.

For a bigger breakfast

Add a fried egg on top (adds 6 grams of protein), or pair with a protein coffee.

Cottage Cheese Toast

Prep 5 min. Cook 2 min. Makes 1 servings of 2 slices.

Ingredients

Instructions

  1. Toast the bread until crisp and golden.
  2. Spread each slice with half the cottage cheese.
  3. Top with the cherry tomatoes, drizzle with olive oil and sprinkle with everything seasoning, pepper and basil.

Notes

  • For a smooth spread, blend the cottage cheese for 30 seconds first. It looks and tastes like whipped ricotta.
  • Use a sturdy bread so the toast holds up under the topping.
