This edamame salad is crunchy, colorful and full of plant protein: 15 grams per serving, plus 8 grams of fiber. It takes 15 minutes, uses frozen edamame, and holds up in the fridge for four days.

Why edamame

Shelled edamame has about 18 grams of protein per cup, more than most other vegetables and beans. It is also sturdy, so this salad never wilts.

Make it a meal

  • Add 1 cup cooked quinoa or brown rice.
  • Top with miso glazed salmon or shredded chicken.
  • Toss in a handful of chopped peanuts for extra crunch.

It is also a great side next to a shrimp stir fry.
