Classic chicken salad is mostly mayonnaise. This one swaps most of it for Greek yogurt, keeps a single tablespoon of mayo for richness, and ends up at 38 grams of protein and 300 calories per cup. Sweet grapes and toasted pecans make it feel like a treat.

Make it with what you have

Any cooked chicken works. A store-bought rotisserie chicken gives you about 3 cups of meat and makes this a 15-minute lunch. Leftover grilled chicken works too.

Flavor variations

  • Curry: add 1 tsp curry powder and swap the grapes for diced apple.
  • Buffalo: add 2 tbsp hot sauce, skip the grapes and use blue cheese instead of pecans.
  • Herby: double the herbs and add a handful of chopped parsley and tarragon.

Why it works for lunch

High protein at lunch helps keep you full through the afternoon. A cup of this in lettuce cups is light but filling, and it travels well in a lunch box with an ice pack.

Ingredients

Instructions

  1. In a large bowl, whisk together the Greek yogurt, mayonnaise, Dijon, lemon juice, salt and pepper.
  2. Add the chicken, celery, grapes, pecans and herbs. Fold until everything is evenly coated.
  3. Taste and adjust the salt and lemon. Chill for at least 15 minutes for the flavors to come together.

Notes

  • A small amount of mayonnaise keeps the flavor rich. You can replace it with more yogurt for a leaner salad.
  • Keeps 3 days in the fridge.
  • Toasting the pecans for 4 minutes in a dry skillet makes a big difference in flavor.
