Regular pasta salad is mostly pasta and oil. This protein pasta salad uses chickpea pasta, which has about twice the protein of wheat pasta, plus chicken and feta, for 24 grams of protein per serving.

Don’t overcook the pasta

Chickpea pasta goes from al dente to soft very quickly. Cook it a minute under the package time, rinse it cold, and it will keep a nice bite in the fridge for days.

Why it is great for meal prep

Nothing in this salad wilts. It is better on day two, after the pasta soaks up the vinaigrette.

Swaps

  • Use Greek yogurt marinated chicken or rotisserie chicken.
  • Add roasted red peppers and artichoke hearts.
  • Swap feta for small mozzarella balls and add basil for a caprese version.

Servings

Ingredients

Red wine vinaigrette

Instructions

  1. Cook the pasta in boiling water 1 minute less than the package says. Drain, rinse under cold water and drain again well.
  2. Whisk the vinaigrette ingredients in a large bowl.
  3. Add the pasta, chicken, tomatoes, cucumber, red onion and olives. Toss to coat.
  4. Fold in the feta. Chill for at least 20 minutes before serving.

Notes

  • Chickpea pasta gets mushy if overcooked. Cook it slightly under and rinse it right away.
  • Keeps 4 days in the fridge. Add a splash of vinegar to refresh it before serving.
