This ground turkey taco skillet is taco night, but every serving has 30 grams of protein and everything happens in one pan. Lean turkey does the heavy lifting, black beans add fiber and more protein, and a homemade spice mix keeps the flavor big.

Why make your own taco seasoning

Most packets are mostly salt and starch. Five pantry spices take 30 seconds to measure and give a smokier, fuller flavor. Make a big jar: multiply by six and use 2 tablespoons per pound of meat.

Ways to serve it

  • Over cauliflower rice or shredded lettuce as a taco bowl.
  • Wrapped in a high-protein tortilla for a burrito.
  • Topped with a spoon of plain Greek yogurt instead of sour cream (adds 3 grams of protein).

Meal prep

The skillet holds up for four days, so it doubles as lunch. Pack the cilantro, lime and yogurt separately and add them after reheating.

Ingredients

Taco seasoning

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the turkey and cook, breaking it up, until no longer pink, about 5 minutes.
  2. Add the onion and bell pepper and cook for 4 minutes, until starting to soften.
  3. Stir in all the taco seasoning and cook for 30 seconds.
  4. Add the black beans and the tomatoes with their juice. Simmer for 5 minutes, until most of the liquid has cooked off.
  5. Sprinkle the cheese over the top, cover the pan for 1 to 2 minutes to melt it, then finish with cilantro and a squeeze of lime.

Notes

  • Serve over cauliflower rice to keep it low-carb, or over brown rice or in tortillas for more energy (not included in the nutrition).
  • Keeps 4 days in the fridge. Divide into containers for easy lunches.

    Is store-bought taco seasoning okay?

Yes, use 2 tablespoons. Packets are often saltier, so skip the added salt.
